okay, I have finally actually looked at the article, and sent it to my sauerkraut -making sister who might actually make use of the recipes! I only skimmed the very long health benefits section, but I will add that beets were originally the source of betaine, AKA trimethylglycine. when I ran out of betaine and stop taking it, it took me a while to realize that the reason I was feeling sick all the time was ammonia backed up in my blood, and that betaine actually was needed to clear that out. then, reading up on it, I found that betaine is fed as a supplement to Factory housed animals to help them keep from overheating... 🫤 but this is good information, because I know a very large black horse who tends to overheat All Summer Long. he is now having betaine in his diet.
